right! – Real, pit cooked Texas Style Pit Barbeque. No giant processing
plants here, or warehouses full of mass produced, highly processed frozen
products, just our big old Texas Barbeque pits, a woodshed full of seasoned
oak and hickory and a bunch of hard workin’ folks that still take
pride in their work. Others might do more but nobody does better!

HONEY GLAZED HAM
One of our all time favorites,
we've been cooking these hams since 1985 and they're still one of our
best sellers. They are hand trimmed, extra tender, fully cooked and honey
glazed (ask the other guys if they use real honey to glaze their hams).
And because we cook them using only seasoned hardwood, they have that
unique, smoky West Texas flavor that really sets us apart from the competition.
Whole and half hams available, we can provide whatever you need, anything
from an 8-pound half to a giant 25-pound whole ham. $5.49 per pound.
TURKEY BREAST
Make no mistake! This is not
like the highly "processed" turkey breast that you see at the
local deli. This is the real deal! We start with an all-natural, premium
quality, boneless, skinless turkey breast. Then we season it with our
special blend of seasonings and slow cook it in the pit until it's golden
brown, tender, juicy and delicious. A favorite with both kids and the
health conscious, they truly are "barbeque health food". As
the centerpiece for a traditional holiday dinner or for snacks and sandwiches
when unexpected guests pop in, these are really great! Whole breasts run
anywhere from 2 1/2 to 3 1/2 pounds, $9.99 per pound.
PRIME RIB ROAST
What's the secret to our great
Prime Rib? Simple, we start with the very best; a U.S.D.A. Choice, Certified
Angus "Rib Eye Roast". They're hand trimmed, coated with our
special blend of seasonings and then slow cooked in the pit until they're
crusty on the outside and pink and juicy on the inside. Truly a great
piece of beef! We can provide whatever size roast you need, anything from
a 2-pound chunk to a giant 14-pound whole roast, $16.99 per pound.
JUMBO GULF SHRIMP
Shrimp? You bet! The owner,
Dan Huntoon, has a real fondness for good shrimp. After he left Texas
he started hauling fresh shrimp up out of Cameron, Louisiana to wholesale
over in the Detroit area. The shrimp that we are selling are absolutely
top shelf, every bit as nice as the ones Dan used to pick up down there
on Monkey Island. They are extra select and run 16-20 shrimp to the pound.
These are harvested right out of the Gulf of Mexico, not Bangladesh, not
Thailand and not Timbuktu! One thing that needs to be noted is the fact
that we NEVER mix sizes, you pay for 16-20 count shrimp, and you get 16-20
count shrimp. It sounds simple but you'd be surprised how many of our
competitors mix some little ones in with the big ones in order to make
an extra buck. Our shrimp are boiled in our special blend of Cajun country
spices (no, they're not hot!) and are ready to peel & eat when you
pick them up. And of course we always have plenty of our delicious cocktail
sauce to go along with your shrimp. $16.99 per pound.

Favorites
BEEF BRISKET
We use only "USDA Choice"
fresh beef briskets. Seasoned with our special blend of spices, they spend
up to twenty-four hours in the pit. Crusty on the outside-smoky, tender
and delicious on the inside, this is one of our specialties and what Texas
style pit barbeque is all about. Carved brisket runs $9.99 per pound.
PORK LOIN
One of the finest cuts from
our friend the pig. A very lean cut that we season and cook in the pit
until it's smoky, tender and delicious. One of our most popular meats
and we cook tons of it every year. $9.99 per pound.
POLISH SAUSAGE
This sausage is custom made
for us by a small neighborhood meat market that's been supplying the local
polish community for many years. It's a natural casing pork sausage delicately
seasoned with marjoram, black pepper and fresh garlic and then slowly
cooked in the pit. $7.99 per pound.
HOT LINK SAUSAGE
Just like the sausage found
in many of the BBQ joints in the Texas hill country. It's an all beef
sausage in a natural casing seasoned with salt, black pepper, red pepper
and just a touch of fresh garlic. We developed this recipe especially
for our customers who have lived in or visited Texas and miss their "Hot
Links". $7.99 per pound.
BABY BACK RIBS
Tender, juicy and smoked clear
to the bone! We purchase only the leanest and meatiest, "2 and down"
pork back ribs available on the market. They are seasoned with our special
blend of spices and then cooked in the pit using a slow burning hardwood
fire. They're crusty on the outside and tender and juicy on the inside.
These "Babies" are what rib eatin' is all about! $11.99 per
pound, with slabs weighing approximately 1 1/4 pounds each. Make sure
to order plenty of these; lots of guys can knock down a whole slab at
one sitting!
