Barbequed Meats...
TEXAS BEEF BRISKET
We use only "USDA Choice" fresh beef briskets. Seasoned with
our special blend they spend up to twenty-four hours in the pit. Crusty
on the outside - smoky, tender and delicious on the inside. This is one
of our specialties and what Texas style pit barbeque is all about.
BONELESS
PORKLOIN
One of the finest cuts from our friend the pig. A very lean cut that we
season and cook in the pit until it's smoky, tender and delicious. One
of our most popular meats and we cook tons of it every year.
BONELESS
TURKEY BREAST
Boneless, skinless, natural turkey breast seasoned with a special blend
of seasonings. Cooked in the pit until they're golden brown, tender, juicy
and delicious. A favorite with both kids and the health conscious, it
truly is "barbeque health food".
MICHIGAN "POLISH"
SAUSAGE
This sausage is custom made for us by a small neighborhood meat market
that's been supplying the local polish community for many years. It's
a natural casing pork sausage delicately seasoned with marjoram, black
pepper and fresh garlic and then slowly cooked in the pit.
TEXAS "HOT LINK"
SAUSAGE
Just like the sausage found in many of the BBQ joints in the
Texas hill country. It's an all beef sausage in a natural casing seasoned
with salt, black pepper, red pepper and just a touch of fresh garlic.
We developed this recipe especially for our customers who have lived in
or visited Texas and miss their "Hot Links".
HONEY GLAZED HAM
This is the same delicious bone-in ham that we sell hundreds
and hundreds of during the holidays and use in our "pit baked beans".
It's honey glazed; fork tender and never salty. We cook them 12 to 15
hours in the pit so they have a great smoke flavor. Available carved,
whole or half.
BABY BACK RIBS
Tender, juicy and smoked clear to the bone! We purchase only the leanest
and meatiest, "2 and down" pork back ribs available on the market.
They are seasoned with our special blend and then cooked in the pit using
a slow burning hardwood fire. They're crusty on the outside and tender
and juicy on the inside. These "Babies" are what rib eatin'
is all about!
BONELESS "PRIME
RIB " ROAST
A hand trimmed "Rib Eye Roast" coated with a special blend of
seasonings and then slow cooked in the pit. They get crusty on the outside
but remain tender, pink and juicy on the inside. Folks brag about our
brisket, I guess they've never had our prime rib! An old Texas Cowboy
said it best: "Good Barbeque is cooked the same way that a cowboy
dances - slow, easy and often. It's as tender as a lady 's heart, as moist
as her goodnight kiss and as lean as a cowboy 's wallet".

PIT BAKED BEANS
Our very own recipe! We cook'em "in the pit" with plenty of
brown sugar, fresh chopped onions, molasses and tasty bits of smoked meat.
HOME STYLE POTATO
SALAD
Diced potatoes, dill pickle, onion and sweet red bell pepper blended in
a rich tangy dressing. An old standby and still a favorite!
RED SKIN POTATO SALAD
Thick slices of "skin-on" red skin potatoes, celery, carrots,
cucumber and scallions blended in a mayonnaise dressing flavored with
just a touch of dill.
BAKED POTATO SALAD
When you want something a little different, this is it! Russet baking
potatoes cooked in their skins, with smoky bits of bacon and chives blended
in a rich sour cream dressing.
ITALIAN PASTA SALAD
Multi colored rotini pasta, ripe olives and sweet red bell pepper in an
Italian dressing that's made with olive oil, herbs and parmesan cheese.
PRIMA PASTA SALAD
Multi colored rotini pasta, hard salami, provolone cheese, pepperoni,
ripe olives, artichoke hearts and sweet red bell pepper in an Italian
dressing hat's made with olive oil, herbs and parmesan cheese.
MACARONI & CHEDDAR
SALAD
Elbow macaroni blended with pickle, sweet red bell pepper and small cheddar
cheese chunks in a creamy dressing rich with sour cream. One of our most
popular salads!
HONEY MUSTARD PASTA
SALAD
Uniquely shaped radiatore pasta and a gentle sprinkling of herbs and seasonings
blended in a creamy honey mustard dressing. A very attractive and tasty
salad.
FRESH CHOPPED COUNTRY
COLESLAW Shredded fresh cabbage and carrots blended in a creamy
old-fashioned slaw dressing. Lots of folks have just got to have slaw
with their barbeque!

BOWL
Grapefruit and orange sections mixed with "Jet Fresh" pineapple
chunks and sweet red grapes. (Seasonal product)
CHILLED FRESH FRUIT

Fresh cut chunks of ripe juicy watermelon, cantaloupe and honeydew mixed
with strawberries and sweet red and green grapes. (Seasonal product)
Relish Tray & Desserts...
RANCH HAND RELISH
TRAY
Dill pickle spears, sweet pickle chips, queen sized Spanish olives, extra
large ripe olives, fresh jalepeno peppers, cherry tomatoes and assorted
cheese cubes. All of these goodies go great with barbeque!
CHOCOLATE FUDGE NUT
BROWNIES
Everybody loves these! Soft, chewy and full of walnuts they're topped
with creamy smooth chocolate fudge frosting.
TEXAS PECAN PIE
A moist flaky crust filled with
rich custard and topped with extra select Texas pecan halves. This is
a real "down home"
Texas dessert!
CARAMEL APPLE CHEESECAKE
Old fashioned creamy cheesecake in a graham cracker crust. It's topped
with cinnamon
apples, a delicious walnut crunch, and drizzled with thick rich caramel.
COUNTRY STYLE CARROT
CAKE
An exceptionally moist, delicious layer cake, heavy with walnuts, raisins
and crushed pineapple. It's iced with a rich buttercream frosting.
RASPBERRY CHEESECAKE
Old-fashioned creamy cheesecake in a graham cracker crust swirled with
raspberries then topped with cream and candied walnuts. Finally it's
drizzled with raspberry sauce.
CARAMEL APPLE GRANNY
Deep-dish apple pie in a short bread crust. It has a delicious toffee
studded custard filling that's loaded with crispy Granny Smith apples.
It's topped with buttery caramel. This dessert is absolutely "top
shelf.
